How Do We Make Tiramisu Without Raw Eggs? Cook them!
Cooking the yolks solves the main concern of bacteria with raw eggs. But how and what we cook it with takes it to a different level. Before adding the yolks to the Tiramisu, they are cooked in sugar and Kahlua (alcohol) to 75 deg C for an extended period of time to get a thick, creamy, flavourful sabayon. This sabayon is then used as a base that is not only safe, but also:
